RECIPES FOR COOKING WITH KRISTEN AND KINGSOLVER

Dinner Recipes

Blueberry Lime Ice
Yield:  4 servings

Ingredients:

3 pints blueberries
3 tablespoons apple juice squeezed from frozen concentrate, thawed
3 tablespoons fresh squeezed lime juice
½ cup fresh squeezed orange juice
fresh blueberries and mint (optional for garnish)

Procedure:

In a large mixing bowl,combine all ingredients.
Place in a shallow non-reactive dish (stainless steel or pyrex).
Cover and place in freezer.  Freeze until solid.

Remove from freezer and allow it to thaw slightly.  Break up frozen
berry mixture with a large spoon and place it in a food processor fitted
with a blade.  Process until smooth, about 3-5 minutes.  Occasionally
scrape down the sides of the bowl.

The mixture will be the consistency of soft serve ice cream.Serve
immediately, garnished with fresh blueberries and mint sprig.

Mandelbrot (Jewish Biscotti)
Yield:  4 servings

Ingredients:

1 cup unsalted margarine or butter
1½ cups sugar
4 eggs
1 teaspoon vanilla

½ cup whiskey or brandy
4 cups unbleached all-purpose flour
4 teaspoons baking powder
1 teaspoon salt
1 cup raisins
1 cup grated coconut
½ cup chopped walnuts
1 cup slivered,blanched and toasted almonds

Procedure:

Preheat Oven to 350 degrees
Cream together the margarine and the sugar
Beat the eggs well and combine with the margarine, vanilla and whiskey.
Combine the flour with the baking powder and salt.  Add to the
margarine and sugar mixture.  Mix well.
Blend in the raisins, coconut, walnuts and almonds.
Fashion dough into loaves 2 inches in diameter and 12 to 15 inches long.
Place on paper-lined baking sheet.
Brush the tops with a mixture of one egg and one tablespoon water.
Sprinkle sugar over the top.
Bake about 30 or 40 minutes or until tops are nicely browned.
When cool, slice thin on a cutting board at an angle into slices
½ inches thick.
Return slices to baking sheet, standing them up and return to over.
Bake another 10 minutes until crisp and dry.
Allow to cool completely before storing or serving.
